1996 Blanc de Blancs LD
This is Iron Horse's "tÍte de cuvée", our top of the line. It is composed of the family's favorite lots of wine from a fabulous vintage for bubbly, bottled and laid down in March 1997, aged for eight years, then freshly or "late" disgorged beginning in December 2005. Everything about this wine is a lift. It is extremely refined, almost weightless, yet incredibly rich and has a freshness and crispness that belies the wine's age.
Food PairingStunning with warm endive salad with shaved Parmigiano and truffles, Maine lobster and corn cakes, caramelized guinea fowl with morel risotto.
