2004 Estate ChardonnayOur concentration on Estate Chardonnay is bearing delicious fruit. We are successfully adding new layers and complexity to our Estate bottling without resorting to more oak and ML. For us, malo-lactic fermentation is simply an acid balancing tool – not a stylistic component, and we feel very strongly about keeping the oak beautifully integrated in the wine. Food PairingThis wine has a freshness and vivacity that makes it especially great with food. Enjoy with fresh grassy chevre, beet and walnut salad, asparagus soup with citrus cream, rainbow trout, salmon and avocado salsa, grilled scallops with wild mushroons, fresh summer corn soup, seared baby bok choy, steamed lobster, lemon roast checken served with jasmine rice Total production: 4,883 cases. |
