It’s naturally sweetened with only fresh corn and coconut cream, and this easy corn pie recipe pairs refreshingly with our Sparkling Wines for an extra bit of excitement. Serve with juicy peaches, strawberries or pears, and maybe a little sweetened whipped cream for a finishing touch. Serves 6-8 people.
Ingredients
5 ears of corn, peeled and shucked
4 eggs
1 cup medium grind corn meal
1 cup creme fraiche
1 cup coconut cream
6 Tbsp softened butter
1.5 tsp baking powder
1.5 tsp sea salt
How To Make

Preheat oven to 350 degrees Fahrenheit.

Add all the ingredients into a blender and puree until very smooth.

Pour into a very well buttered 12″ skillet.

Bake for about 45-50 minutes until golden and meets the clean toothpick test.

Cut into pie like pieces and serve with peaches, strawberries or pears, maybe a little sweetened whipped cream, and of course, the bubbly!
