Summer Poached Apples in Wine

Late summer is the start of apple season, beginning with Sebastopol’s signature Gravenstein apple; renown for its sweet-tart, crisp flavors. “Gravs” are delicious fresh off the tree and locally famous for making apple pies. This poached apple in wine recipe is great with Sparkling Wine because of the dessert’s balance of sweetness and acidity.
Ingredients
How to Make
Wash and core the apples and sprinkle with a few drops of lemon juice
In a medium size saucepan, make a syrup with sugar, a wedge of lemon, cinnamon stick, Sparkling Wine, and rum
Add about 2 cups of water, cover and bring to a roiling boil
Uncover and reduce mixture over medium heat for about five minutes
Add prepared apples, cover and poach apples until tender, about 10 minutes, Check at 5 minutes
Remove pan from heat, cover and let rest until ready to serve
Serve on a pretty dish, one apple for each, or on a small platter, drizzled with the cook syrup/juices and pop a bottle of bubbly.
